This project, in collaboration with Arla and the Digital Dairy Chain, aims to develop a multiplex molecular assay for the on-site detection of key microorganisms critical to hygiene control in dairy processors. Building on previous work carried out at the University of Glasgow and SRUC, the assay will target a range of microorganisms including Staphylococcus aureus, Clostridia spp., Bacillus cereus, and E. coli to provide a comprehensive assessment of hygiene indicators, spoilage organisms, and pathogens. Utilizing an isothermal nucleic acid detection technique combined with lateral flow visualization, the assay will deliver rapid, sensitive, and specific results comparable to laboratory-based testing, while remaining accessible and user-friendly for on-site use. The multiplexing capability enhances efficiency and cost-effectiveness by enabling simultaneous detection of multiple targets, supporting improved hygiene monitoring and food safety in dairy processing environments.
