Abstract
This project identifies trends and opportunities within the markets where the Scottish food sector operates and how this might be supported. This is done using data showing the introduction of new products. The logic is that launched products reflects food and drink firms’ views of what it is important in the target market and also reflect consumers’ preferences. The latter is because before introducing new products firms collect information about consumers’ views.
