Long term trends on the purchase of selected vegetables in Scotland

Abstract

Food consumption does not change overnight due to motives such as routine, preferences; therefore, it is
important to study long term trends. This project estimated those trends for the consumption of fruit and vegetables in Scotland processing disclosed household surveys by Defra since 1974 (i.e., National Food Survey, Expenditure and Food Survey and Living Costs and Food Survey).
Why this kind of analysis is important?
• It shows the evolution of preferences, which respond to different factors (e.g., health, taste).
• Important counterpart of any analysis of production.
• Provide information of the total demand for food.
